In a mixing bowl, thoroughly blend softened cream cheese, diced jalapeños, shredded cheddar, sour cream, garlic powder, onion powder, smoked paprika, salt, and black pepper until homogeneous.

Using a sharp knife, carefully slice a pocket horizontally in each chicken breast without cutting through entirely.

Evenly divide the jalapeño cheese mixture among the chicken breast pockets, pressing the filling securely inside.

Brush the outside of stuffed chicken breasts lightly with olive oil and season with additional salt and pepper. In an oven-safe skillet over medium-high heat, sear each breast for 3–4 minutes per side until golden brown.

Transfer skillet to the preheated oven. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 74°C (165°F) and stuffing is hot throughout.

Remove from oven and let rest for several minutes. Garnish with chopped cilantro or parsley if desired before serving warm.
