# Ingredients:

→ Chicken & Seasoning

01 - 800g chicken breast, cut into cubes
02 - 3 garlic cloves, finely minced
03 - 2 teaspoons onion powder
04 - 2 teaspoons mixed dried herbs
05 - 1 teaspoon dried chili flakes
06 - 2 teaspoons smoked paprika
07 - 1 teaspoon fine sea salt
08 - 2 teaspoons olive oil

→ Crispy Potatoes

09 - 800g potatoes, cut into 2cm cubes
10 - 1 teaspoon fine sea salt
11 - 1 teaspoon garlic powder
12 - 1 teaspoon mixed dried herbs
13 - 1 teaspoon dried chili flakes
14 - 1 teaspoon smoked paprika
15 - Cooking spray or additional olive oil, optional

→ Creamy Garlic Parmesan Sauce

16 - 120ml milk (any variety)
17 - 100g reduced-fat cream cheese
18 - 40g freshly grated Parmesan
19 - Sea salt, garlic powder, & mixed herbs to taste
20 - 50g shredded mozzarella (or reduced-fat cheese of choice)
21 - Fresh parsley, finely chopped, for garnish

# Steps:

01 - Preheat air fryer or conventional oven to 200°C. Toss potato cubes in salt, garlic powder, herbs, chili flakes, smoked paprika, and a light mist of oil or cooking spray. Arrange in a single layer and cook in the air fryer for 18–20 minutes or oven-bake for 20–23 minutes until golden and crisp.
02 - While potatoes cook, heat olive oil in a large non-stick pan over medium heat. Add cubed chicken, garlic, onion powder, mixed herbs, chili flakes, paprika, and salt. Sauté for 5–6 minutes, stirring frequently, until chicken is lightly browned and cooked through.
03 - Reduce heat to low. Pour in milk and add cream cheese to the pan. Stir continuously, ensuring the cream cheese melts fully and the sauce becomes smooth and glossy.
04 - Fold in the crispy potatoes. Sprinkle mozzarella over the top, cover, and let sit for 4–5 minutes until the cheese has melted and the dish is piping hot.
05 - Remove from heat. Garnish generously with chopped fresh parsley. Serve immediately while hot.

# Notes:

01 - Monitor potatoes carefully to prevent over-drying. Lightly mist with cooking spray if omitting oil.
02 - Always lower the heat before adding dairy to avoid curdling and ensure a smooth sauce.
03 - Stir cream cheese thoroughly for an even, creamy consistency before introducing potatoes.
04 - Let cheese fully melt so the top becomes gooey before serving.
