Cut the potatoes into quarters or large chunks.

In a large bowl, toss the potato pieces with olive oil or melted butter, salt, black pepper, and any desired optional seasonings.

Arrange the seasoned potatoes in the center of a large sheet of heavy-duty aluminum foil. Fold and seal the edges to create a tightly closed packet.

Place the foil packet directly into the embers of a hot campfire. Cook for 20–30 minutes, turning the packet occasionally, until the potatoes are tender when pierced with a fork.

Carefully remove the foil packet from the fire using tongs. Allow to cool briefly before opening. Serve hot.
