Peel the sweet potatoes and cut them into uniform cubes.

Heat olive oil in a large skillet over medium heat. Add the sausage and cook for 5–7 minutes, stirring occasionally, until browned.

Add the cubed sweet potatoes to the skillet and sauté for 5 minutes.

In a bowl, whisk together honey, minced garlic, soy sauce (or tamari), paprika, salt, and black pepper.

Pour the honey garlic sauce over the sausage and sweet potatoes. Stir to coat. Cover the skillet and simmer for 10 minutes, or until the sweet potatoes are fork tender.
