Place quick-cooking oats, 120 ml water, and a pinch of salt into a medium pot. Set over medium-high heat and begin stirring continuously.

Stir constantly until the mixture thickens and becomes creamy, and most water is absorbed, about 4 minutes.

Reduce heat to low. Pour in 80 ml very cold water and whisked egg. Immediately and vigorously whisk to blend into the oatmeal until it thickens with a custard-like texture, about 1 minute.

Remove from heat and stir in vanilla bean paste or pure vanilla extract, if using.

Transfer the oatmeal to a serving bowl. Garnish with fruit, seeds, or desired toppings. Serve immediately.
