Swiss Mushroom Melt Sandwich (Print)

# Ingredients:

01 - 2 tablespoons unsalted butter, plus additional for bread
02 - 1 tablespoon olive oil
03 - 1 shallot, finely chopped
04 - 2 cups mushrooms, sliced (Portobello, Cremini, or Shiitake)
05 - 1 teaspoon thyme, fresh or dried
06 - 1 tablespoon balsamic vinegar (optional)
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - 4 slices Swiss cheese (or Gruyère)
10 - 8 slices rye, sourdough, or artisan bread

# Steps:

01 - Place a dry skillet over medium heat. Add the sliced mushrooms and cook for 5 to 7 minutes, stirring occasionally, until most moisture is released and evaporated.
02 - Add butter, olive oil, and finely chopped shallot to the skillet. Continue cooking for 5 minutes, stirring, until mushrooms are golden and shallots are softened.
03 - Stir in thyme, balsamic vinegar if using, salt, and freshly ground black pepper. Mix well and remove pan from heat. Let mushrooms cool slightly before assembling.
04 - Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, layer one slice of Swiss cheese, a generous portion of the mushroom mixture, and top with another slice of cheese. Close with a second slice of bread, buttered side out.
05 - Heat a clean skillet or preheat a panini press over medium heat. Place assembled sandwiches, buttered side down, in the pan. Cook 2–3 minutes per side until bread is golden and the cheese is fully melted. Serve warm.
