Preheat oven to 190°C. Rinse the chicken under cold running water, then pat completely dry with paper towels.

In a small bowl, combine kosher salt, smoked paprika, garlic powder, onion powder, and black pepper. Distribute the seasoning blend evenly over the surface and under the skin of the chicken.

Drizzle olive oil over the seasoned chicken and gently massage to coat all surfaces.

Place the chicken breast-side up on a roasting rack set in a baking pan. Roast for about 75 minutes, or until the juices run clear when the thigh is pierced and the internal temperature in the thickest part reaches 74°C.

Allow the chicken to rest uncovered for a minimum of 10 minutes before carving. Slice and serve warm.
