01 - 1 whole chicken (1.8–2.3 kg)
02 - 2 teaspoons kosher salt
03 - 2 teaspoons smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 0.5 teaspoon freshly cracked black pepper
07 - 2 tablespoons olive oil

# Steps:

01 - Preheat oven to 190°C. Rinse the chicken under cold running water, then pat completely dry with paper towels.
02 - In a small bowl, combine kosher salt, smoked paprika, garlic powder, onion powder, and black pepper. Distribute the seasoning blend evenly over the surface and under the skin of the chicken.
03 - Drizzle olive oil over the seasoned chicken and gently massage to coat all surfaces.
04 - Place the chicken breast-side up on a roasting rack set in a baking pan. Roast for about 75 minutes, or until the juices run clear when the thigh is pierced and the internal temperature in the thickest part reaches 74°C.
05 - Allow the chicken to rest uncovered for a minimum of 10 minutes before carving. Slice and serve warm.
