Peach Clafoutis French Dessert (Print)

A light French dessert featuring juicy peaches in a tender, vanilla-scented custard with a golden finish.

# Ingredients:

→ For Baking Dish

01 - Butter, for greasing the baking dish

→ Batter

02 - 300 ml whole milk
03 - 100 g granulated sugar, divided
04 - 3 large eggs
05 - 1 tablespoon vanilla extract
06 - 0.25 teaspoon kosher salt
07 - 125 g all-purpose flour

→ Fruit

08 - 3 cups (approximately 4 medium) ripe peaches, sliced

→ Topping

09 - Powdered sugar, for sprinkling

# Steps:

01 - Preheat oven to 175°C (350°F).
02 - Generously butter a medium baking dish, approximately 2 litres and at least 4 cm deep.
03 - Combine milk, 65 g of the granulated sugar, eggs, vanilla extract, kosher salt and flour in a blender. Blend on high speed until smooth and foamy, about 1 minute.
04 - Pour a 0.5 cm layer of batter into the prepared baking dish. Place dish in oven and bake for 5 minutes, or until batter just sets.
05 - Evenly distribute the sliced peaches over the set batter. Sprinkle remaining granulated sugar (about 2 tablespoons) over the fruit. Carefully pour the remaining batter over the peaches.
06 - Bake in the centre of the oven for 50 to 55 minutes, until puffed, golden, and a knife inserted into the centre comes out clean.
07 - Remove from oven and allow to cool slightly before serving.
08 - Just before serving, dust the top with powdered sugar using a fine sieve or shaker. Serve warm.

# Notes:

01 - An 28 x 18 cm or 20 x 20 cm baking dish is ideal for even baking.
