14 - 2 cups cooked rice (white, brown, or jasmine)
15 - 1 cup corn kernels (fresh, frozen, or canned)
16 - 1 cup black beans, drained and rinsed
17 - 1 cup diced red bell pepper
18 - 0.5 cup chopped cilantro
19 - 0.5 cup crumbled queso fresco (optional)
20 - 2 ripe avocados, sliced
21 - Lime wedges for serving

# Steps:

01 - In a small bowl, mix chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
02 - Rub chicken breasts evenly with olive oil, then coat thoroughly with the prepared spice blend. Allow to marinate for 10 minutes.
03 - In a clean bowl, whisk together honey, adobo sauce, finely chopped chipotle pepper, and lime juice. Set aside.
04 - Preheat a grill pan or outdoor grill to medium-high. Cook chicken breasts 5–6 minutes per side, until a thermometer registers 74°C and the meat is thoroughly cooked.
05 - Transfer chicken to a board, cover loosely, and let rest for 5 minutes. Slice thinly across the grain.
06 - Spoon a base of cooked rice into each serving bowl.
07 - Layer corn, black beans, diced red bell pepper, and sliced chicken over the rice.
08 - Generously spoon the honey chipotle sauce over the chicken and toppings.
09 - Sprinkle with chopped cilantro and crumbled queso fresco if desired. Arrange avocado slices and lime wedges on the side.
10 - Present the bowls while warm and enjoy.

# Notes:

01 - Adjust heat intensity by changing the amount of chipotle pepper used.
02 - For a vegetarian adaptation, substitute chicken with grilled vegetables or tofu.
03 - Prepare components ahead and assemble the bowls just prior to serving.
04 - The honey chipotle sauce doubles as a vibrant marinade for other proteins.
