Ground Beef Zucchini Sweet Potato (Print)

Ground beef, zucchini, and sweet potatoes combine in a simple one-pan dinner full of vibrant color and savory flavor.

# Ingredients:

01 - 450 g lean ground beef
02 - 2 medium zucchinis, sliced into half-moons
03 - 2 medium sweet potatoes, peeled and diced (approximately 300 g)
04 - 1 medium onion, diced
05 - 3 garlic cloves, minced

→ Pantry & Seasonings

06 - 2 tablespoons olive oil
07 - 1 teaspoon smoked paprika
08 - 1 teaspoon ground cumin
09 - Salt, to taste
10 - Black pepper, to taste

# Steps:

01 - Wash and peel the sweet potatoes, then dice them into bite-sized cubes. Slice zucchinis into half-moons. Dice the onion and mince the garlic.
02 - Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened and translucent.
03 - Stir in ground beef, minced garlic, smoked paprika, ground cumin, salt and black pepper. Cook, breaking up the meat with a spatula, until the beef is thoroughly browned.
04 - Mix in the diced sweet potatoes. Cover the skillet and steam for 10 minutes, stirring occasionally, until the sweet potatoes soften slightly.
05 - Incorporate the sliced zucchini and cook, uncovered, for 5–7 minutes until just tender but still firm.
06 - Remove the skillet from heat. Serve hot, garnished with fresh herbs if desired.

01 - For added freshness, garnish with chopped parsley or coriander before serving.
