Wash and peel the sweet potatoes, then dice them into bite-sized cubes. Slice zucchinis into half-moons. Dice the onion and mince the garlic.

Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened and translucent.

Stir in ground beef, minced garlic, smoked paprika, ground cumin, salt and black pepper. Cook, breaking up the meat with a spatula, until the beef is thoroughly browned.

Mix in the diced sweet potatoes. Cover the skillet and steam for 10 minutes, stirring occasionally, until the sweet potatoes soften slightly.

Incorporate the sliced zucchini and cook, uncovered, for 5–7 minutes until just tender but still firm.

Remove the skillet from heat. Serve hot, garnished with fresh herbs if desired.
