Grilled Cod Roasted Tomatoes Dill (Print)

Charred cod fillets with sweet tomatoes and creamy dill sauce create a lively, satisfying main course.

# Ingredients:

→ For the Grilled Cod

01 - 2 cod fillets (approximately 170 g each)
02 - 15 ml olive oil
03 - 1 teaspoon smoked paprika
04 - 0.5 teaspoon garlic powder
05 - 0.5 teaspoon onion powder
06 - 0.5 teaspoon salt
07 - 0.25 teaspoon black pepper
08 - 15 ml fresh lemon juice
09 - 1 teaspoon fresh thyme, finely chopped

→ For the Roasted Tomatoes

10 - 300 g cherry tomatoes
11 - 15 ml olive oil
12 - 0.5 teaspoon salt
13 - 0.25 teaspoon black pepper
14 - 1 teaspoon balsamic vinegar
15 - 1 clove garlic, minced
16 - 1 tablespoon fresh parsley, finely chopped

→ For the Creamy Dill Sauce

17 - 120 ml heavy cream
18 - 60 ml sour cream or Greek yogurt
19 - 1 tablespoon Dijon mustard
20 - 1 tablespoon fresh dill, finely chopped
21 - 1 teaspoon lemon zest
22 - 0.5 teaspoon salt
23 - 0.25 teaspoon black pepper
24 - 1 tablespoon unsalted butter

# Steps:

01 - Preheat the oven to 200°C. In a bowl, combine cherry tomatoes, olive oil, salt, black pepper, balsamic vinegar, and minced garlic. Arrange on a baking sheet and roast for 20 minutes, until blistered and lightly caramelized.
02 - While the tomatoes roast, pat cod fillets dry with paper towels. Evenly rub with olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, lemon juice, and fresh thyme.
03 - Preheat a grill or grill pan over medium-high heat. Grill cod fillets for 3–4 minutes per side, until golden and the fish flakes easily.
04 - In a small saucepan over low heat, melt butter. Stir in heavy cream, sour cream or Greek yogurt, Dijon mustard, fresh dill, lemon zest, salt, and black pepper. Simmer for 2–3 minutes, stirring constantly, until heated through and smooth.
05 - Plate the roasted tomatoes, top with the grilled cod, and spoon over the creamy dill sauce. Finish with a garnish of fresh parsley and serve immediately.
