Wash peaches thoroughly. Slice in half, remove stones, and cut into even slices. Skins may be left on.

Combine sliced peaches, honey or maple syrup, and fresh lemon juice in a blender. Blend on high speed for 1 minute until completely smooth.

Pour the blended mixture through a fine mesh strainer or mesh nut bag into a glass bowl, pressing to extract as much liquid as possible.

For a lighter texture, stir in water gradually until the preferred consistency is reached.

Using a funnel, transfer the juice to a glass jug or jar. Refrigerate until cold and serve chilled.
