Doritos Casserole with Chicken (Print)

A creamy blend of chicken, cheese, and Doritos delivers bold flavor in every bite for satisfying weekday meals.

# Ingredients:

01 - 227 g chive whipped cream cheese
02 - 340 g shredded Mexican cheese blend

→ Proteins

03 - 3 cups cooked rotisserie chicken, shredded

→ Vegetables

04 - 1 bunch green onions, chopped
05 - 248 g canned corn, drained

→ Pantry

06 - 298 g condensed cream of chicken soup
07 - 3 cups Doritos, crumbled

→ Seasonings

08 - 0.5 tsp salt
09 - 0.5 tsp ground black pepper
10 - 1 tsp garlic powder

# Steps:

01 - Preheat the oven to 200°C.
02 - Combine chive whipped cream cheese and condensed cream of chicken soup in a large mixing bowl. Blend until smooth using an electric mixer.
03 - Reserve 60 ml of chopped green onions. Add remaining green onions, shredded chicken, drained corn, 170 g shredded Mexican cheese blend, salt, pepper, and garlic powder to the bowl. Mix thoroughly.
04 - Transfer mixture to a greased 23 x 33 cm baking dish, spreading evenly.
05 - Distribute crumbled Doritos evenly over the surface. Top with remaining 113 g shredded cheese blend and 60 ml reserved green onions.
06 - Bake uncovered for 17–20 minutes, or until cheese topping is bubbling and golden brown.
07 - Portion and serve immediately while hot.

# Notes:

01 - For extra flavour, substitute a portion of the Mexican cheese blend with smoked cheddar or pepper jack.
