# Ingredients:

→ Blueberry Thyme Sauce

04 - 240 ml fresh blueberries, plus extra for garnish
05 - 30 ml balsamic vinegar
06 - 15 ml honey
07 - 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

→ For Searing

08 - 15 ml high-quality olive oil

# Steps:

01 - Preheat oven to 190°C. Assemble and measure all ingredients for efficient workflow.
02 - Pat chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
03 - In a medium saucepan over medium heat, combine blueberries, balsamic vinegar, honey, and thyme. Cook for approximately 5 minutes, gently smashing berries with a fork to form a chunky sauce.
04 - Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear chicken breasts for 2–3 minutes per side until a deep golden crust forms.
05 - Pour the blueberry thyme sauce over the seared chicken in the skillet, allowing the sauce to sizzle and coat the pieces.
06 - Transfer the skillet to the preheated oven. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 74°C.
07 - Allow chicken to rest in the skillet for 3 minutes. Plate with extra sauce and garnish with reserved blueberries and additional fresh thyme if desired.
