# Ingredients:

→ For the bites

01 - 6 fresh jalapeños, halved and seeded
02 - 225 grams cream cheese, softened
03 - 115 grams shredded sharp cheddar cheese

→ For the coating

04 - 125 grams all-purpose flour
05 - 2 large eggs, beaten
06 - 60 grams panko breadcrumbs

→ For frying and serving

07 - Neutral cooking oil, for deep frying
08 - Ranch dressing, for dipping

# Steps:

01 - Preheat oil in a deep pot to 175°C.
02 - In a bowl, blend cream cheese and shredded cheddar until fully combined and smooth. Gently fold in the chopped jalapeño halves.
03 - Fill each jalapeño half with the cheese mixture, pressing to secure the filling inside.
04 - Set up three separate shallow bowls: one containing flour, one with beaten eggs, and one with panko breadcrumbs.
05 - Dredge each filled jalapeño in flour, then dip in egg, and finally coat thoroughly in panko breadcrumbs.
06 - Gently lower the coated bites into hot oil and fry for 3 to 4 minutes, or until crisp and golden brown.
07 - Transfer the fried bites to a paper towel-lined plate to remove excess oil. Serve immediately with ranch dressing on the side.
