Delicious Street Corn Chicken Rice (Print)

# Ingredients:

→ Protein

01 - 2 medium boneless, skinless chicken breasts

→ Grains

02 - 250 grams cooked rice (white, brown, or cauliflower)

→ Vegetables

03 - 160 grams corn kernels (fresh, frozen, or canned)
04 - 1 small red onion, diced
05 - 1 avocado, sliced
06 - 1/4 cup fresh cilantro, chopped

→ Aromatics & Seasonings

07 - 2 cloves garlic, minced
08 - Juice of 1 lime
09 - 1 teaspoon chili powder
10 - 1 teaspoon ground cumin
11 - Salt and black pepper, to taste

→ Fats & Dairy

12 - 2 tablespoons olive oil
13 - 60 grams Greek yogurt or sour cream
14 - 60 grams Cotija cheese or feta, crumbled

# Steps:

01 - Cook the rice according to package instructions. Once finished, keep warm until ready to assemble.
02 - Pat chicken breasts dry and season both sides with salt, black pepper, chili powder, and ground cumin. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Place chicken in the skillet and cook for 6–8 minutes per side, until browned and cooked through. Remove from heat, rest 5 minutes, then slice thinly.
03 - In the same skillet, add an additional 1 tablespoon olive oil if needed. Sauté corn and diced red onion over medium-high heat until lightly charred and aromatic, about 4–5 minutes. Stir in minced garlic and cook for 1–2 additional minutes.
04 - In a large mixing bowl, combine cooked rice with the sautéed corn and onion mixture. Squeeze in the juice of 1 lime and toss to incorporate evenly.
05 - Portion the rice mixture into bowls. Top each serving with sliced chicken breast, avocado slices, a dollop of Greek yogurt or sour cream, crumbled Cotija or feta cheese, and a garnish of chopped fresh cilantro.
06 - Present immediately with additional lime wedges if desired.

# Notes:

01 - For a vegetarian variation, substitute chicken with black beans or grilled tofu.
02 - Increase heat level by adding sliced jalapeños or a drizzle of hot sauce.
03 - For lower carbohydrates, use cauliflower rice in place of grain rice.
