One Pot Veggie Mac Cheese (Print)

Creamy pasta, colorful veggies, and melty cheese combine in a simple, one-pot dinner ready in under 30 minutes.

# Ingredients:

→ Pasta

01 - 200 g elbow macaroni or preferred pasta shape

→ Vegetables

02 - 1 cup (approx. 120 g) assorted mixed vegetables, such as broccoli florets, diced bell peppers, and spinach leaves

→ Broth

03 - 950 ml vegetable broth or water

→ Dairy

04 - 200 g shredded cheddar cheese or plant-based cheese alternative

→ Oil & Seasonings

05 - 1 tablespoon (15 ml) olive oil
06 - 1 teaspoon (approx. 3 g) garlic powder
07 - Salt and freshly ground black pepper, to taste
08 - Optional: paprika or Italian seasoning, to taste

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add mixed vegetables and sauté for 3-4 minutes until slightly softened.
02 - Stir in elbow macaroni and pour vegetable broth or water into the pot. Bring to a boil.
03 - Once boiling, reduce heat to a simmer, cover with a lid, and cook for 8-10 minutes. Stir occasionally until pasta is al dente and most liquid is absorbed.
04 - Remove the pot from heat. Immediately stir in the shredded cheese until fully melted and the mixture is creamy. For added richness, a splash of milk or additional cheese may be incorporated according to preference.
05 - Add salt, pepper, and additional spices such as paprika or Italian seasoning to taste. Mix thoroughly and divide into serving bowls. Garnish as desired and serve immediately.
