Ground Turkey Zucchini Casserole (Print)

Hearty blend of turkey, zucchini, groats, and cheddar for a delicious, family-friendly oven-baked meal.

01 - 2 tablespoons olive oil
02 - 450 grams ground turkey
03 - 120 grams chopped onion
04 - 2 cloves garlic, minced
05 - 680 grams zucchini, diced
06 - 480 grams cooked groats (or brown rice, quinoa, etc.)
07 - 410 grams canned diced tomatoes
08 - 0.5 teaspoon dried oregano
09 - 0.5 teaspoon smoked paprika
10 - 15 grams fresh basil, finely chopped
11 - 200 grams aged cheddar cheese, shredded

# Steps:

01 - Set the oven to 175°C and allow it to preheat while preparing the other components.
02 - Heat a large skillet over medium-high heat. Add olive oil, then ground turkey. Sauté, breaking up the meat until it becomes browned.
03 - Add chopped onion and minced garlic to the browned turkey. Cook for 2 minutes, stirring, until onion softens. Add diced zucchini and continue to sauté for 3-4 minutes until softened.
04 - Add cooked groats, diced tomatoes, oregano, smoked paprika, chopped basil, and half of the shredded cheddar. Stir to combine thoroughly, ensuring the grains absorb the tomato.
05 - Spray a 23 x 33 cm baking dish with non-stick cooking spray. Transfer the mixture into the dish, spread evenly, and top with the remaining cheddar.
06 - Bake uncovered at 175°C for 25-30 minutes until the cheese is melted and golden. Alternatively, cover with foil to freeze for later preparation, thawing fully before baking.

01 - For best results, use young zucchini and freshly shredded cheese to enhance texture and flavor.
