Creamy Sun Dried Tomato Chicken (Print)

Tender chicken, sun dried tomatoes, and spinach simmered in a creamy sauce with pasta for easy Italian comfort.

01 - 15 ml olive oil
02 - 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
03 - 2 g garlic powder
04 - 5 g Italian seasoning
05 - 0.5 g red pepper flakes, optional
06 - Salt, to taste
07 - Freshly ground black pepper, to taste
08 - 80 g shallots, diced
09 - 2 cloves garlic, grated
10 - 55 g sun dried tomatoes, drained and chopped
11 - 225 g uncooked fusilli or penne pasta
12 - 590 ml low sodium chicken broth
13 - 60 g baby spinach, packed
14 - 55 g low fat cream cheese, room temperature
15 - 240 ml whole milk
16 - 20 g shredded parmesan cheese
17 - 4 g fresh basil, chopped

# Steps:

01 - Heat olive oil in a large deep skillet over medium-high heat. Add the chicken pieces in a single layer and season with salt, freshly ground black pepper, Italian seasoning, garlic powder, and red pepper flakes. Sauté for 6–8 minutes until chicken is thoroughly cooked. Transfer chicken to a plate and set aside.
02 - If necessary, add a splash of oil to the pan. Add diced shallots, grated garlic, and chopped sun dried tomatoes; sauté for 2 minutes until fragrant.
03 - Pour in the chicken broth and scrape up any browned bits from the bottom. Bring the mixture to a boil.
04 - Add the uncooked pasta and reduce the heat to medium. Stir frequently and cook for 15–20 minutes until the pasta is al dente.
05 - In the last minute of pasta cooking, add the baby spinach and stir until leaves are wilted.
06 - Add the cream cheese and shredded parmesan, mixing until fully melted and incorporated.
07 - Return the cooked chicken to the pan along with whole milk. Stir until the sauce has thickened and everything is heated through, about 3–5 minutes. Adjust seasoning to taste.
08 - Remove from heat and top with chopped fresh basil and extra parmesan if desired. Serve immediately.
