# Ingredients:

→ Cajun Chicken

01 - 4 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 1 tablespoon Cajun seasoning
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon paprika
07 - 0.5 teaspoon dried thyme
08 - 0.5 teaspoon salt
09 - 0.5 teaspoon black pepper

→ Vegetables

10 - 2 bell peppers, sliced
11 - 1 medium onion, sliced
12 - 2 cloves garlic, minced
13 - 1 tablespoon olive oil

→ Garnish

14 - Fresh parsley or cilantro, chopped (optional)

# Steps:

01 - In a small bowl, combine Cajun seasoning, garlic powder, onion powder, paprika, dried thyme, salt, and black pepper.
02 - Evenly coat the chicken breasts with the prepared spice blend, ensuring all surfaces are well covered.
03 - Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 6 to 7 minutes per side, until thoroughly cooked and golden brown. Remove chicken and set aside.
04 - Add 1 tablespoon olive oil to the same skillet. Sauté sliced bell peppers and onion over medium heat for 5 to 6 minutes until slightly softened. Add minced garlic and cook for an additional 1 to 2 minutes until fragrant.
05 - Slice the cooked chicken into strips. Return the chicken to the skillet with vegetables and toss to combine. Continue cooking for 2 to 3 minutes until heated through and flavors meld.
06 - Garnish with freshly chopped parsley or cilantro, if desired. Serve hot.

# Notes:

01 - Adjust the level of spiciness by varying the amount of Cajun seasoning or adding a pinch of cayenne pepper for extra heat.
02 - This dish can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2-3 months.
03 - Cook vegetables to your preferred texture, leaving them crisper or cooking longer for a softer finish.
04 - For best results, slice chicken against the grain to keep pieces tender.
